Imagine stepping onto the bustling streets of Mexico, where the atmosphere is filled with the mouthwatering aromas of roasting meats, freshly made tortillas, and spicy salsas. As locals and visitors both put their way through the teeming crowds of street food vendors, The lively sounds of chatter and laughter fill the ambiance. It’s here, amidst the colorful chaos, I found myself exploring Mexican street food.

One of my first encounters was with the ubiquitous taco, an iconic street food that defines Mexican culinary culture. The sheer variety of fillings was overwhelming, from tender carne asada to juicy al Pastor and even grilled cactus. As I stood by the taco stand, the friendly vendor greeted me. I ordered 3 tacos Suadero. Suadero is a tasty beef cut made up of the flesh ad fat found between the thighs and the skin. And I eagerly topped them with chopped onions, fragrant cilantro, and a squeeze of zesty lime. With my first bite, as someone who grew up eating rice for my entire life soon realized I love my tacos so much, the tender meat…
